Royston Soo first joined Les Amis Group as Assistant Manager of the now defunct Au Jardin in 2000. A veteran in the F&B industry, he is, today, one of the stalwarts of Les Amis Group, taking over the reins of Les Amis in 2010.

Royston’s career in this industry began in 1981, when he was a room service waiter at Mandarin Hotel. Later, he moved to the Inter-Continental Hotel. In 1985, he joined Maxime de Paris, the French restaurant in the Regent Hotel, where he started learning about French fine-dining. This was the start of a 12-year career, as he worked his way up through the ranks from waiter to Manager.

When Maxime closed its doors, Royston was invited to move to the Maldives, to open a new fine- dining restaurant for Four Season’s Hotel Group. After, in 1999, he joined the Kanuhura Beach & Spa Resort team, as the Food and Beverage Manager, before finally joining the Les Amis Group in 2000.

As Assistant Manager of Au Jardin, Royston quickly proved himself capable, being both reliable and great with guests and staff alike, and was appointed Manager of the restaurant soon after joining the team.

In 2010, he was made manager of Les Amis, the flagship restaurant of the Group. In recognition of his talent and experience, Royston was promoted to Director of Restaurants in 2012 to oversee operations and mentor the service teams of restaurants within the Group. With his wide range of experience and understanding of the Group’s service philosophy, he was the best candidate within the Group to elevate dining experiences at the flagship restaurant.
